  • Broccoli Rabe Rolls

    Ingredients
    • Broccoli rabe (2 bunches)
    • 3 cloves garlic
    • 5 tablespoons olive oil
    • 2 pounds broccoli rabe sausage or sweet sausage
    • 1/2 pound chunk provolone
    • 1/4 cup Locatelli grated cheese
    • Salt & Pepper to taste
    • 1 package egg roll wrappers
    Preparation
    Wash and take thick stems off of broccoli rabe. Sauté about 5 tablespoons of oil and three cloves of chopped garlic in a pan until garlic is translucent and not browned. When the garlic is almost done add the broccoli rabe. Cook the broccoli rabe for about 15 minutes on low to medium flame, do not cover. Add broccoli rabe sausage without the skin to pan and cook until no longer pink, a little browned is okay. When everything is ready drain the oil. Let sit and cool for about 15 minutes. After ingredients are cooled take an egg roll wrapper and place it on the counter or a cutting board. Add about 1-2 tablespoons of the mixture and pieces of provolone on top. Sprinkle with grated cheese, salt and pepper. Fold egg roll wrapper (instructions come with wrappers). With a pastry brush wet ends of wrapper with water or egg wash. This keeps it from opening when you fry it. Deep fry until egg roll wrapper is golden brown. Drain on a paper towel and enjoy!! This is very delicious!!!
