  • Pasta Aglio E Olio
    Recipe in memory of my Grandmother Antonia Zottola
    • 1/2 cup oil
    • 1 stick margarine
    • 2 cloves garlic crushed
    • 1 tbsp. dried parsley or 2 tbsp. fresh parsley chopped
    • 1 lb. pasta
    Start the water for the pasta adding salt to taste. Once the water is boiling add the 1 pound of pasta to the pot. While the pasta is cooking sauté garlic in oil until golden brown and then remove from heat. Add margarine and parsley and let stand until melted. Add 1 cup of the salted water from the pasta that's cooking into your oil mixture. Bring to a boil (Approximately 5-10 minutes). Drain pasta and combine with the garlic and oil mixture. Sprinkle with grated cheese and serve.
