  • Baked Clams

    • 100 medium chowder clams
    • 10 garlic cloves, minced
    • 1/2 cup parsley, minced
    • 2 cups olive oil
    • Black pepper, freshly ground
    Open clams and arrange them on a bed of rock salt in a large pizza pan. Combine garlic, parsley and olive oil in a bowl approximately one hour before preparation. Put 1/2 to a full teaspoon of the oil mixture on each clam. Sprinkle black pepper on each clam. Any or all of the following toppings may be added: Tabasco sauce, catsup, red pepper flakes. Bake in a 450-degree oven for approximately 20 minutes. Be certain to drink the liquid that remains in the shell, it's as flavorful as the clam itself.
