Recipe contributed by Dennis De Klerk |
Ingredients |
- 3-4 pounds boneless pork loin roast
- 1/4 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 3 large cloves garlic finely mince
- 1 tablespoon dried basil
- 2 tablespoons kosher salt
- 2 teaspoons fresh ground black pepper
- 1/2 cup water
|
Preparation |
Slice loin roast into third inch slices. Place in a large zip lock plastic bag. Combine vinegar, oil, garlic, basil, salt, pepper and water in a bowl and whisk well. Pour mixture into bag with pork cutlets, secure zip lock squeezing most of the air from the bag. Lay bag flat on its side and flip several times to thoroughly coat all of the meat. Allow to marinate for 30 to 45 minutes. Meanwhile, prepare the grill (charcoal or gas), oil grates, lay cutlets flat on grill over medium flame or 5 inches above hot coals. Grill approximately 4 minutes per side. Serves 6-8.
