  • Biscotti
Recipe contributed by my mother-in-law Angie Perin
    Ingredients
    • 6 eggs
    • 1/2 cup oil
    • 1 cup sugar
    • 2 teaspoons baking powder
    • 2 cups flour
    • 3/4 teaspoons vanilla or anise
    Preparation
Beat eggs then add sugar, oil, flour, baking powder, and vanilla or anise. Beat until smooth. Place greased wax paper into a 13 by 9 by 1 1/2 inch pan. Pour batter in the pan and bake at 350 degrees until slightly brown. Check batter with toothpick to ensure the batter is done (stick toothpick into the batter if you pull it out and there is no batter on the toothpick it is done). Cut the cake into slices and arrange them in pan and place into oven and cook until both sides are slightly brown. Can be served plain or with icing.
