  • Home Canned Peppers in Vinegar
    Recipe in memory of my Great Aunt Elena Vento
    • Wash and firmly dry sweet peppers
    • Cut into slices and remove seeds
    • Boil 2 parts water and 1 part vinegar
    • Add sliced peppers to boiling liquid for about 3 minutes
    • Stir them as needed
    • Remove peppers and place them in a bowl. Keep the liquid boiling
    • Immediately fill sterilized hot jars with peppers
    • Add 1 teaspoon salt to quart size jar
    • Cover peppers with the hot water-vinegar liquid
    • Add 1-2 tablespoons oil to each jar
    • Place hot sterilized lid on each jar
    Do not move jars until the lids are sealed. Place the cooled jars in a cold & dry storage room. You can also prepare whole peppers using the steps above.
