  • Cavatelli

    Ingredients
    • 1 pound ricotta cheese
    • 2 jumbo eggs or 3 regular eggs
    • 3 cups flour
    Preparation
    Mix all ingredients together in bowl. When dough is mixed thoroughly and is soft you are ready to make your pasta. Spread flour over your surface. Take the dough and cut it into sections. Take each section and roll it out like a long string. Once you have rolled your dough you want to cut the sections into small pieces about 1/2 inch long. Take each 1/2 inch piece and with your index and middle finger placed in the center you will add pressure and roll the piece towards you. Continue until all the dough is gone. Add to boiling water and cook until tender.
