Giardiniera Chicago Sicilian Style |

Ingredients |
- 3 pounds Jalapeno peppers, seeded & cut into pieces
- Extra virgin olive oil
- 3 stalks celery (with leaves) cut into pieces
- Oregano to taste
- Basil to taste
- Garlic, cut into slices
- Capers
- Olives (pitted)
- Salt & pepper to taste

Preparation |
Plunge peppers and celery into boiling salted water for 2 minutes. Drain and add all other ingredients. Top off with extra virgin olive oil. Keep covered in refrigerator. The flavors intensify and create a spicy hot relish that you put on top of tomato sauces and pasta. Especially good on a tuna/tomato sauce with bucatini pasta. Hot Giardiniera is something eaten by Sicilians in the Chicago area. I never saw it in NYC, but had it often in the Windy City.
