  • Maryland Fried Steak Fish

    Ingredients
    • 2 pounds of fresh center cut slices of steak fish
    • Nabisco cracker meal
    • 2 large eggs
    • Salt and black pepper
    • Cooking oil
    Preparation
    Season fish slices on both sides with salt and pepper. Make a egg wash with both eggs by adding 3 or 4 tablespoons water to eggs and beat until well mixed. Dip each fish slice into egg wash, then coat each slice of fish in cracker meal, that you place in a shallow bowl or plate beforehand.

    Place coated fish on a platter or plate and put in refrigerator for breading to set, about 30 minutes.

    In a large skillet heat cooking oil until hot. Brown fish in hot oil on both sides until golden brown. Remove from skillet and place on paper towel covered platter to remove excess oil from fish. Can be kept hot in a moderate oven until ready to eat, but it is at it's best right out of the skillet when hot and flaky when you taste with a fork.

    It is excellent served with coleslaw or homemade potato salad and lettuce and tomato. Also good with home fried sliced potatoes and onion, served with lettuce, sliced tomatoes and mayonnaise.

    ENJOY EVERYBODY - This fish dish is totally a Maryland state favorite. Serves 4.
