Pesce a la Padella |
Recipe contributed by my Mom Lina Parente |
Ingredients |
- 2 pounds of smelts
- 2 cups bread crumbs
- 1 teaspoon salt
- 1/8 cup vinegar
- 1 cup mint leaves
- 1 can tomato sauce
- 3 tablespoons oil
- 2 cloves garlic (garlic salt may be substituted)
|
Preparation |
Debone smelts. In a 13 x 9 pan you will layer these ingredients in the following order. 1 tablespoon oil, 1 pound of smelts, 1 cup of bread crumbs, a handful of mint leaves, 1/2 teaspoon of salt, 1/16 cup of vinegar, and 1/2 can of tomato sauce. Repeat the process so you have a second layer of oil, smelts, bread crumbs, mint leaves, salt, vinegar, and tomato sauce. Spread the last tablespoon of oil. Place pan in a preheated oven at 350 degrees for approximately 30 minutes. The pesce a la padella will be done when the top reaches a golden brown. |
