  • Maggie's Panzanella

    • 6-8 slices of Italian bread, about 3/4 inch thick
    • Extra virgin olive oil
    • 1 teaspoon dried oregano
    • Salt
    • Pepper
    • Water
    • Crushed red pepper flakes optional
    Pan fry bread slices in a thin layer of olive oil. Each side should be well toasted. Remove to a platter and cool. Using fingers pulverize dried oregano and sprinkle evenly over bread. Salt and pepper to your taste. For extra zing add some crushed red pepper. Sprinkle about 1 tablespoon of water over each slice and allow to soak for 5 minutes before serving. Serves 6-8.
