  • Pasta and Anchovies

    Ingredients
    • 1/8 cup of olive oil
    • 2-3 cloves of garlic
    • 3 cans anchovies
    • 1 large can tomato puree or ground tomatoes
    • Spaghetti (1-2 pounds)
    • Plain bread crumbs toasted
    • 1/2 finely diced onion
    • Fresh grated cheese
    Preparation
    On medium heat add only enough olive oil to coat your frying pan. Add the 3 cloves of minced garlic and finely grated onion. Once the mix has been sautéed and translucent add the cans of drained anchovies, save the anchovy oil. Take a fork and smash your anchovies in the frying pan. Mix the contents together along with tomato puree/ground tomatoes and heat till contents come to a slow boil, simmer for 30 minutes. Add in anchovy oil and simmer 30 minutes. Bake plain bread crumbs in the oven until deep golden brown. Once the contents are cooked - cook 1-2 pounds of spaghetti. Once cooked drain the spaghetti. Add some of the sauce to give the spaghetti a light color. Mix thoroughly. Save the remaining sauce for the top of each serving, add toasted bread comes on top of each serving and serve with grated cheese.
