Ingredients |
- 1 diced medium onion
- 2 cloves minced garlic
- 2 links Italian sausage (mild or hot)
- 4 fresh diced tomatoes (in season) or 1 can diced tomatoes
- 1/2 cup pasta water
- 1 can cannolli beans, rinsed/drained
- 1/2 cup Mozzarella cheese, diced
- 1 pound Penne pasta
- 1/4 cup chopped fresh parsley
- Salt to taste
- Red pepper flakes to taste (only needed if not using Italian sausage)

Preparation |
Prepare pasta for cooking in salted water. Sauté onion, garlic, sausage removed from casing. Add 4 fresh chopped tomatoes (in season) or 1 can diced tomatoes,undrained, 1/2 cup pasta water, 1 can rinsed/drained cannolli beans. Heat through 4-5 minutes covered. Drain cooked penne add to sauce and toss with Mozzarella. Place in serving dish and top with fresh parsley. Pass Parmesan or Romano when serving. Serves 4-6.
