  • Pizzelles
    Recipe contributed by my wife Judy Perin
    • 6 eggs
    • 1 cup sugar
    • 1 cup oil
    • 2 cups flour
    • 1 tsp. lemon extract or 1/4 tsp. anise oil, or 1 tsp. vanilla
    Beat the eggs until they are light and fluffy. Add sugar gradually and continue beating until the sugar is dissolved. Beat oil in a little at a time. Continue beating until batter is smooth. Add the flour a little at a time and make sure the flour is mixed in well. Spoon onto a greased and pre heated pizzelle iron. Bake until lightly browned.
