  • Pollo a la Mama

    • 3-4 pounds chicken or larger cut up
    • 4-6 medium potatoes cut in 1/2
    • 2-3 cloves of garlic crushed
    • A sprig of fresh basil
    • 28 ounce can crushed tomatoes
    • 1 pound spaghetti
    • Salt and pepper to taste
    Place the cut up chicken in a large roasting pan. Add the potatoes around the chicken. Pour the tomatoes over the chicken and potatoes. Add garlic, basil, salt and pepper. Seal with foil. Bake at 350 for 3 hours. Uncover last 1/2 hour. Remove chicken and add prepared spaghetti to sauce. To serve, mash 1/2 potatoes on bottom of dish, place tossed spachetti on to and mix. Serves 4-6 people.
