  • Rice and Pea Soup from Matera (Risi e Bisi a Partiri dal Matera)

    Town/Region of Recipe: Matera, Basilicata
    • 3 tablespoons onions chopped
    • 6 tablespoons olive oil
    • 1 10 ounce package frozen peas
    • 1/2 teaspoon salt
    • 6 cups chicken broth
    • 1 cup rice uncooked
    • 3 tablespoons parsley chopped
    • 2/3 cup grated Parmesan cheese
    In large pot sauté onion in olive oil until golden. Add peas and salt, cook for two minutes, stirring often. Add broth, bring to a boil, add rice stirring thoroughly. Simmer for an additional 25 minutes or until rice is tender. Add parsley. Remove from heat. Add Parmesan cheese just before serving. Serves 6.
