Ingredients |
- 1 kg (2.2 pounds) of fresh escaroles
- 4 fresh garlic gloves
- 12 anchovies (or sardines) under olive oil
- 4 tablespoons of extra virgin olive oil

Preparation |
Get the escaroles, wash properly, cut them in small leaves and put into a big bowl. Then mince the garlic and the anchovies all together, and pour onto the escaroles. Add olive oil and mix for one minute at least. If you do not like to eat fresh garlic, chop it in big pieces (mince the anchovies separately), let 'em stay with the salad for a while and afterwards remove them once you have prepared the escarole. You will only smell the garlic but you will not run the risk of eating it. This is a typical Christmas time salad from south Italy. Serves 4 people. Buon appetito. |
