Stuffed Mushrooms Toritto Style |
Recipe contributed by Julia Scalcione |
Town/Region of Recipe: Toritto, Puglia |
Ingredients |
- 1 pound mushrooms
- 1/2 teaspoon salt
- 1/3 cup olive oil
- 1/2 teaspoon pepper
- 2 garlic cloves
- 3/4 cup breadcrumbs
- 1 teaspoon parsley
- Grated cheese 1/4 cup (optional)
|
Preparation |
Preheat Oven to 400 degrees. Oven must be hot when completed mushrooms go in. Cut off stems and wipe well with paper towel. My Nana used a cotton kitchen towel. Chop stems then sauté them in olive oil with the garlic for a few minutes until soft, add bread crumbs and brown. Remove everything from stove. Add parsley, salt, pepper and cheese. Mix well with the stem and garlic mixture. Fill each mushroom cap with a teaspoon of mixture until all is used. Place on greased cookie sheet and bake in hot oven of 400 degrees for 15-20 minutes.
