Eggs & Vegetables Medley |

Ingredients |
- 1 large or 4 small zucchini sliced thin or cubed
- 5 potatoes sliced thin or cubed
- 4 onions sliced
- 5 peppers sliced (sweet and/or hot)
- 4 tbs. oil
- 2-4 eggs beaten
- Salt and pepper to taste

Preparation |
Heat oil in a large frying pan. Begin cooking the zucchini, potatoes, peppers and onion. Stir occasionally and make sure to flip the vegetables. This will give them a nice golden brown color. Cook for 15-20 minutes uncovered or until all the vegetables are cooked to your liking. Once the vegetables are done you will add the 2-4 beaten eggs. Cook for an additional 5 minutes. Lightly salt and pepper the mixture before serving. This goes great between 2 slices of fresh Italian bread. |
