  • Zuppa de Scalcione di Cipolle con Uova (Scalcione Onion with Eggs)

    • 1/4 cup olive oil
    • 2 large sweet onions
    • 4 fresh ripe tomatoes chopped
    • 4 cups water
    • 8 large eggs
    • Parmesan cheese
    • Italian bread
    • Salt & pepper to taste
    Sauté onion until light golden brown and soft. Add tomatoes, salt and pepper. Simmer about ten minutes. Stir occasionally and add water and simmer another five minutes. Break eggs, slide into onion mixture and let poach. Place Italian bread in soup plates, serve one or two eggs on each plate. Ladle with onion soup over all. Sprinkle with cheese. Serves 4.
